Hide in a nearby bush. Throw a rock to lure him away from his post. Knife takedown / Bowshot and drop his body in a bush/in undergrowth so patrolling guards don't get alerted. Same works for grouped enemies (divide and conquer). Also like its been suggested you can shoot a cage to release the animals.
